Open the server's page from the list and it shows that server's last wipe, the pattern of recent wipes and the estimate for the next one. Estimates are based on the schedule the server publishes and the wipes we have observed on it. An owner can change the time, so treat the figure as a guide rather than a fixed appointment.
An estimate is when a server wipes on its own cycle; the force wipe countdown is when Facepunch releases the monthly update. Every server wipes at force wipe, on the first Thursday of the month, regardless of its own schedule. That is why the list is longest as force wipe approaches.
It depends on what you want from the first hours. A server that wiped recently gives you an even start but busy spawns; one about to wipe means anything you build now is lost. Servers just wiped lists those that have already reset, so you can compare both ends of the cycle.
